Why Consider a Juice Detox Program?

A juice detox or cleanse can give you a jump start a clean body and transition to a long-term, healthier relationship with food. People that have followed, even my 3 day juice detox program, have shared that within those 3 days, they rediscover their ability to listen to their bodies, appreciate their will power, and find mental clarity and energy like never before! Due to the specific recipes of my juices, cravings for salty, fatty, or sweet foods will start to dissipate AND you won't feel hungry, tired, or suffer headaches or nausea like any kind of cleanse can initiate. Participants have shared a renewed appreciation for the natural flavors of whole, fresh foods, and can identify normal hunger and fullness cues.

Seeing changes on a scale and feeling changes in how your clothes fit can create the motivation and confidence to begin a long lasting journey of health. The commitment to doing a raw, fresh pressed juice detox program makes you more aware of your emotional, social, environmental, and habitual eating triggers, and awareness is the precursor to making necessary changes in unhealthy patterns. A juice detox program can reinforce healthy goals and make tasks like cooking at home more often, eating breakfast each day, and bringing your lunch to work, even exercise -look and feel a whole lot easier.

Happy Juicing!

Gluten-Free Sweet and Sour Thai Cucumber Pasta Salad

Gluten Free Sweet and Sour Thai Cucumber Pasta Salad [for two]
ingredients:
3 TBSP fresh lemon juice
3 TBSP extra virgin olive oil
2 TBSP white vinegar
1/4 tsp salt [plus extra, to taste]
1/8 tsp dill [fresh or dried]
1/8 tsp garlic powder
1/2 tsp fresh minced garlic
2 cups chickpeas [canned or cooked from dry]
1/4-1/2 cup fresh chopped cilantro, plus extra to garnish
1.5 large english cucumbers
1 cup chopped green bell pepper
1/4 cup finely minced onion
2-3 extra large carrots
2 TBSP honey
2 TBSP rice vinegar
1/2-1 TBSP sesame seeds
1/2-1 TBSP chia seeds

extras: Tool-wise you'll need a spiralizer, mandolin or veggie peeler. anything that will noodle-ize! Chopped peanuts or cashews would be a stellar addition; somehow my pantry was void of both. Food blogger fail!

vegansaurus chefs: skip the honey and make a simple syrup using sugar instead.
t-rex chefs: no. I'll not allow it this time. Go veggie or go home! [then eat bacon tomorrow]

instructions:
Combine lemon juice, olive oil, vinegar, garlic powder, dill, salt, and minced garlic and whisk to emulsify.  In a medium bowl add chickpeas, minced onion, chopped bell pepper, 1/2 an English cucumber [chopped] and cilantro. Pour in dressing and mix thoroughly.  The longer you allow them to marinate the more intense the flavor will be! Next, using a spiralizer or tool of choice [see above for options] curl one english cucumber and 2-3 large carrots [the biggest, thickest carrots you can find] into raw spiral noodles.

Whisk together 2 tablespoons of honey with 2 tablespoons of rice vinegar and pour over salad. Top with extra chopped cilantro and a hearty sprinkle of sesame and chia seeds. If you're adding chopped nuts, toss those babies on top too and have at it!

notes: the chickpea and veggie mixture can be made ahead of time and refrigerated overnight if desired. Bring to room temperature before serving for the absolute best flavor and results. I would also suggest spiralizing the carrots and cuke fresh [within a few hours of serving] so they don't lose nutrients or become soggy. Use the vinegar, lemon juice, and honey to adjust the level of sweet or tartness that makes your heart pitter-patter, it's easily customized and even more easily devoured!

What you should be eating for Breakfast

congee in bowl
Congee is an ancient Chinese Medicinal food that promotes digestion, heals the GI system, it's super easy to make, many options for varying the recipe, and a perfect way to start everyday for low cost and little time commitment!

I'm sure you've all heard that breakfast is the most important meal of the day...now you can have the perfect breakfast ready when you wake up. It's ready when you are. Congee is the perfect meal to make it an amazing day and get everyday started with honoring what your body needs!

I like to add pecans or almonds for protein( soaked overnight in water then strained before putting in my Congee) and/ or a Raw protein powder,  a little unsweetened coconut milk,  pure maple syrup( organic of course), and some ground golden flax seed (  my favorite choice for fiber). Or if you like eggs...prepared scrambled,  poached...however you like your eggs, a little turkey or veggie bacon and top your Congee recipe with that!

If you search Congee Slow Cooker recipes you'll see hundreds of ways to have Congee for any meal! " It's not your mother's slow cooker" is a great recipe book for Congee recipes!
Make it an amazing day!
